Umbrian cuisine, simple and genuine, reflects the richness of the territory. Among its most representative dishes we find:
Strangozzi with Truffles: This long, irregular pasta, typical of the Spoleto area, is a true masterpiece when seasoned with the prized black truffle of Norcia. Its intense flavor and rough texture pair perfectly with the unmistakable aroma of truffle.
Lentils from Castelluccio: Lentils from Castelluccio di Norcia, grown at high altitude, are famous for their delicate flavor and fine texture. They are excellent as a side dish, but also in rustic soups and broths.
Porchetta: A roast pork, flavored with wild fennel, garlic and other spices, cooked at a low temperature for hours. Its crispy crust and tender, juicy interior are a real delight.
Crescia: A typical bread, cooked in a wood-fired oven, which lends itself to different variations. It can be plain, or enriched with fennel seeds or other flavorings. It is often served as an accompaniment to cured meats and cheeses.
Torta al testo: A thin, round focaccia, cooked on an iron griddle. It is simple to make, but incredibly versatile: it can be stuffed with cured meats, cheeses, vegetables or simply seasoned with oil and salt.
Salsiccia di Norcia: A tasty and aromatic cured meat, prepared with minced pork, salt, pepper and other spices. It is excellent as an appetizer, but also as an ingredient in first and second courses.
These are just some of the Umbrian specialties, but the region offers a wide range of other culinary delights, such as pecorino cheeses, fine wines, and many other traditional dishes, which vary depending on the geographical area. Each dish tells a story, linked to the tradition and culture of this splendid territory.
